[White/Orange] La Sorga/Dance of Saint Guy O 2022

Castellin, near Limoux, Pudding (sedimentary soil)
50% Chenin Blanc, 26 years old, and 50% Chardonnay, 8 years old.
Whole bunches and hand-destemmed grapes are blended and lightly pressed.
Maceration for 40 days, aged for 10 months on the lees without débourbage.
Complex aromas of concentrated sweet spices, white flowers and tarte tatin.
The mouth is full of fruit, limestone minerals, and the aroma of bergamot. The lively acidity that lingers on the palate comes not only from the grape variety but also from the terroir at high altitude.
Danse de Saint Guy Haut is an orange wine made by blending Chenin Blanc and Chardonnay and macerating them. It has been aged for 40 days, but the color is (surprisingly) pale golden, has no tannins typical of orange wine, and is characterized by its smooth acidity and aroma that overflows from the glass. Of the 1,200 bottles produced, 360 have arrived in Japan!
